2 lbs Ground Chuck
1 6 oz can of tomato paste, divided
1 cup crushed saltine crackers
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped bell pepper
1/4 cup Dijon mustard, divided
2 eggs, lightly beaten
3 Tablespoons Worcestershire Sauce
2 Tablespoons parsley
1 1/4 teaspoons salt, divided
1 teaspoon ground black pepper
2 Tablespoons firmly packed brown sugar
1 Tablespoon lemon juice
Garnish with parsley

Line large baking dish with aluminum foil. Spray with nonstick cooking spray. Preheat oven to 350º. In a large bowl, combine ground chuck, 3 Tablespoons of tomato paste, crackers , onion, celery, bell pepper, 2 Tablespoons of mustard, eggs, Worcestershire, parsley, 1 teaspoon salt and pepper. Shape mixture in baking dish. Bake for 35 minutes. In a small bowl, combine remaining tomato paste, remaining 2 Tablespoons of mustard, remaining 1/4 teaspoon salt, brown sugar and lemon juice. Spread mixture over meatloaf and bake an additional 35 to 40 minutes until done. Garnish with parsley, if desired. Allow to stand for 10 minutes before slicing.

This makes a large meatloaf...enough for company...But if you're not having company, it will make great meatloaf sandwiches the next day!
