1 cup sugar
½ tsp salt
3 tbsp cornstarch
2 ½ tsp baking powder
1 can pineapple
1/3 cup shortening
½ cup maraschino cherries drained
2 eggs beaten
1 2/3 cups flour
½ cup milk
½ tsp vanilla
2 tbsp melted butter

Directions:
Directions:

Mix 1/3 cup of sugar with corn starch then add juice drained from pineapple. Cook in heavy saucepan over direct heat stirring constantly until sauce boils and becomes clear. Add drained pineapple and butter. Put in greased baking dish .Add drained cherries and arrange in pineapple mixture.
Cream shortening until softened and add the remaining sugar and eggs beating vigorously until smooth and fluffy. Stir in the vanilla. Add flour, salt and baking powder and stir. Add flour mixture and milk alternately beginning and ending with flour. Beat well after each addition. Turn batter into baking dish over pineapple.
Bake at 350 degrees for 35 to 40 minutes or until cake is springy when lightly pressed with finger tips. Cool in pan on rack.
