2 tbsp. olive oil
1 lb small dried white beans
1 large onion chopped
1/4 lb. slab bacon or salt pork cut into small pieces
2 cloves garlic chopped
1/4 lb. smoked ham cut into small pieces
3/4 lb dry chorizo
pepperoni 1/2 inch pieces
5 cups water
1 tbsp. paprika
2 sprigs italian parsley
2 bay leaves
1 small tomato chopped
salt, pepper
red pepper to taste
1/2 tsp. cumin

Directions:
Directions:
Soak beans overnight in large pot. Drain water. In dry pan add olive oil to same pan saute garlic and onion. Add cut smoked ham to beans and pour in 5 cups water. Add chorizo, parsley, bay leaves, Bring to boil and reduce heat to a simmer for 45 minutes. Add tomato, cumin, salt and pepper and cook 15 to 25 minutes more or until beans are tender. Skim fat and remove from heat and let stand covered 10 minutes before serving.
