Lemon Chess Pie Recipe

Toss lightly with fork or whisk:
2 c. Sugar
1 T Flour
1 T Cornmeal

Add: 4 eggs, unbeaten
¼ c. butter, melted
4 T lemon rind (opt.)
¼. c. lemon juice

Mix well and
Pour into unbaked pie shell and bake @350 degrees for 45 – 50 minutes or until knife inserted into center comes out clean.

**This can be stretched to make a larger pie or 2 pies by adding an extra egg or 2 and maybe a tad bit more lemon juice and ¼ c. more sugar and butter, or you can just double the recipe.

*For years I thought this was called Lemon Chest Pie. I originally wrote the recipe that I have by either Grandma or Mom reciting the ingredients to me as I wrote it down, hence the misunderstanding of the name of the pie. This has to be my all time favorite pie above all others. It’s sweet, lemony and buttery with a slight crunch on the top; it is absolutely delicious. I do love my pie. Dawn has always requested this pie for Thanksgiving or when they were going to be at our house.
Not to bore anyone, but one year when I was teaching English II, I had assigned a creative, descriptive writing assignment in which the students were to use personification In their piece. I wrote one also to share with them, guess what it was about? Pie!
