6-8 thin sliced chicken cutlets
Italian bread crumbs
Jar of spaghetti sauce or homemade sauce
1/4 cup of freshly grated Parmesan cheese
1 ball of fresh mozzarella
olive oil

Directions:
Directions:
Preheat oven to 400º.Rinse chicken and pat dry. Season with salt and pepper. Dip chicken in olive oil then roll in bread crumbs until thoroughly coated. Drizzle cookie sheet with a little olive oil to prevent sticking then once chicken are placed on pan drizzle a little more oil on top to prevent sticking. Cook about 20 min or until golden brown and chicken is no longer pink. Top each piece with a spoonful of sauce,a sprinkle of Parmesan and a slice of fresh mozzarella. Put back in the oven to melt cheese. You can also broil on low to make cheese a little more crispy and brown. Serve on top of a bed of pasta. Enjoy!
