1 1/2 c flour
1 1/2 c sugar
1 1/4 tsp baking powder
1 tsp salt
1/2 T instant coffee
1/4 c cocoa
1/2 c butter
1/4 c melted milk chocolate
3 eggs
1 c milk
1 tsp vanilla

Directions:
Directions:
· Heat oven to 350
· Grease two round 8-inch cake pans; dust with flour
· Beat sugar and butter and melted chocolate together and add eggs and vanilla
· Beat well
· Sift together dry ingredients
· Add milk and dry ingredients alternately

Pour into prepared pans and bake about 38 minutes.
Let cool in pans a few minutes then turn out on rack.

Frost or can be baked as a bundt cake

*Jenni found this recipe in my old Amy Vanderbilt’s Complete Cookbook that I inherited from my mother-in-law, Martha Hinnant. Jenni added depth of flavor with the addition of coffee granules. So now we call it our devil's food cake.
I don’t know if Mrs. Hinnant ever made this particular cake, but I do know she cooked and baked and that it was always good. You will find quite a few recipes in this collection that came from her. Also, look for a list of cow working menus in this collection. They were her menus which I began using when I cooked for the cow crew on the ranch at Freer. Without them I wouldn’t have known what I was doing.
