3-4 lbs. whole chicken
2 limes
3 cloves garlic
2 scallions
1/4 inch ginger root
1 1/2 tbsp. curry powder
pinch of pimento
1 tsp. sugar
2 tsp. salt
2 tbsp. oil
2 c. water
3 medium potatoes

Cut frozen chicken into 1 1/2 to 2 inch serving pieces. Juice limes in water and quickly wash and drain the chicken. Blend garlic, scallions and ginger for 30 minutes. Mix curry powder and pimento with sugar and salt. Rub on chicken and leave for one hour. Brown chicken in oil and keep turning until curry powder is cooked. Cut potatoes into cubes and add to chicken along with water. Bring to a boil and turn the heat down to simmer for 20-30 minutes. Chicken should be tender.
