1/2 cup rye flour
1/2 cup cornmeal
1/2 cup whole wheat flour
1 teaspoon bakins soda
1/2 teaspoon salt
3/4 cup strong brewed coffee, room temperature or cold
1/3 cup molasses
1/4 cup canola oil
3/4 cup raisins
Cream cheese (0ptional)

Directions:

1. Preheat oven to 325ºF. Butter and flor 9x4-inch loaf pan:set aside.
2. Combine rye flour,cornmeal,whole wheat flor,baking soda and salt in mixing bowl. Stir in coffe,molasses and oil until mixture forms thick batter. Fold in raisins.
3. Pour batter into prepared loaf pans. Bake 50 minutes or until toothpick inserted into ceter comes out clean. Cool completely in pan on wire rack. Serve with cream cheese, if desired.

Tip: If coffee is hot, pour over 2 ice cubes in a measuring cup to measure 3/4 cup total. Let stand 10 minutes to cool.
