Heart Stew:
1 whole ox heart, cut into cubes
1 onion, diced
2 stalks celery, diced
2 carrots, diced
Better than bouillon beef (2 teaspoons)
1 spring fresh thyme
2 bay leaves
1 bottle dark beer
1 cup oxtail soup
1 can mushroom soup
(optional) 1 can dark beer

Oxtail Soup:

8-12 two inch oxtail sections
1 gallon water
1 teaspoon of salt (added to boiling water)
1 bunch of celery cut fine
2 small onions
4 carrots
4 cloves
salt and pepper to taste

Directions:
1. Prepare oxtail soup while boiling heart.
1a (Preparing oxtail soup):
Place the rinsed and salted oxtails into cold salted water and bring to a boil. Reduce heat and simmer, occasionally skimming the foam from the surface.
1b. When meat is tender, remove the oxtails and add celery, onions, carrots and cloves.(and beef broth)
1c.Cook until the vegetables are tender. Salt and pepper to taste.

2. Place beef heart in large kettle and cover with 12 cups water. I use a large stockpot for this. Bring to a boil over medium heat and simmer for 4-5 hours or until heart is tender. May need to add more water while cooking to keep meat covered. I usually add at least 4 more cups of water while it is cooking.
3. Once heart is tender, remove heart from broth and let cool. Cube meat into 1-2 inch pieces and return to broth. Also add beef broth
4. Add in onions, carrots and bay leaves. Cook on medium low heat for at least 4 hours. (or until celery is see through)
5. After celery is see through add optional beer and can of cream of mushroom as well as oxtail soup.
6. Cook 4 hours
7. Before completed prepare egg noodles
8. Serve over egg noodles.

This is a good traditional English recipe. Another way to serve oxtail/heart stew is over mashed potatoes rather than egg noodles. Although this dish takes a lot of time and effort it is definitely worth the effort.
