1 Leg of Lamb
1 Package of Orzo
Tomato Paste (Small Can)
Salt, Pepper, Oregano & Paprika to Taste

Directions:
Directions:
Wash lamb and place in an oven pan. Season with salt, pepper, oregano and paprika to taste. Bake at 350º until it has a nice toasty color.

Dilute tomato paste with water and add to lamb along with 2-3 cups of water (you want to have plenty of juice when it's cooked). Cover with foil and cook for approximately 2 hours. Varies with size of lamb. To see if it is cooked poke it with a fork, the fork should sink and come out with out any difficulty. Remove lamb and place in covered platter-to keep warm.

Strain the juice and place it in a cooking pot, place on stove and bring to boil. Taste if you need to add any seasoning. Once it is boiling add your orzo and stir for a few minutes so it does not stick to bottom. once it is cooked pour it all back into oven pan and place it back into medium oven until the juice forms a nice crust.

Serve warm.
