Ingredients:  
Ingredients:  
1 pint chicken livers, boiled and minced till creamy as possible,
1 pound ground chuck, browned, and use the fat too,
2 T minced garlic,
1 bell pepper, minced fine,
2 large onion minced fine,
2 ribs celery minced fine,
large pinch of cayenne pepper or 1 teaspoon Tony Chacheres seasoning, or more to taste,
1/2 teaspoon thyme
cooked rice- 3-4 cups,
salt and pepper to taste
1/2 c minced parsley
2-3 cups chicken stock.( Or use the water you boiled livers in)

Place all the veggies in a skillet and cook till soft. Add spices and meat and cook 5 minutes then add in the cooked rice and the stock. Cover and cook on low 15 minutes. Let it sit a few minutes then sprinkle the parsley over it and serve.

This must be on the table at every holiday. If you don't mix in the rice, you can make a big batch of the meat mixture and freeze half for the next holiday. I do that at Thanksgiving so I don't have to do it all again at Christmas. We use this in place of stuffing.
