1 envelope of Knox gelatin
1/4 cup cold water

3 egg yolks
1/3 cup sugar

1 1/4 cups pumpkin
1/2 cup sour cream
1/4 tsp. cloves
1/4 tsp. ginger
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg

1 cup heavy whipping cream
1 cup powdered sugar
1 tsp. vanilla

Directions:
Directions:
1. Soften 1 envelope Knox gelatin in ¼ cup cold water, set aside.
2. Beat egg yolks with 1/3 cup sugar until thick and lemon colored
3. Add pumpkin, cinnamon, sour cream, salt, cloves, nutmeg and ginger
4. Cook over medium heat, stirring constantly until mixture comes to a boil. Reduce heat and cook two minutes, still stirring. Remove from heat and add softened gelatin. Stir until gelatin dissolves.
5. Cool.
6. Beat egg whites until stiff with ¼ cup sugar.
7. Fold egg whites into pumpkin mixture. Whip 1 cup heavy whipping cream and add 1 cup powdered sugar and 1 tea. of vanilla. Spoon half of pumpkin mixture into pie shell* then spread half of whipped cream over that. Repeat. Sprinkle with pecan shavings .
