1 whole chicken cut up
Any additional chicken fat or chicken backs etc.
Water
1 T. Salt
1 cup + or - celery chopped with leaves
3 or 4 carrots chopped

Directions:
Directions:
In a large soup pot, place cut up chicken parts and extra bones and fat.
Cover with cold water to cover + about an inch more
Add salt
Simmer on low until the foam rises. Skim all the scum, it will turn white when the last foam rises.
Add the celery and carrots. The entire cooking process should take about 90 minutes.
Noodles can be cooked separately. Better yet, make the Farina Dumplings!
Soup may be served with chicken removed from the bone or with the chicken on the side.
