Large, Fresh Tomatoes
1 Onion, chopped
2 Jalapeņo Peppers, finely diced
2 Celery Stalks, chopped
1 Small, Sweet Bell Pepper, chopped
1-2 Cloves Garlic, finely diced
Oregano
Italian Seasoning
2 tsp. Salt
Fresh Ground Pepper
1 tsp. Sugar

Blanch & peel tomatoes. In a small saucepan, bring remaining ingredients to a boil. Let this simmer while you are peeling tomatoes. Cut tomatoes into about 1-2" chunks. Fill the jars to about 1" from the top. Squish the tomatoes down pretty good to remove the air bubbles trapped in the bottom. Top off the jars to within 1/2" from the top with the onion mixture, divide evenly into the jars. This usually makes six pints. If you have any of the onion mixture left, it freezes well for the next canning session. Put these in a hot water bath for 40 minutes.
