1 pork sirloin chops boneless or tenderloin any size
1/4 c- 1/3 cup vinegar
1/4 - 1/3 cup water
flour to coat chops
salt and pepper to taste
oil or crisco for frying

Cut the tenderloin or chops into medallions. Season and coat with flour. Lightly brown both sides in oil. When all have been browned drain excess grease, Pour vinegar over chops and add water. Cover and simmer while rice is cooking

I serve mine with rice, the gravy will form from the vinegar and water. You can adjust the vinegar to your preference, more or less and the water as well. I usually make mine with 1 part vinegar, 2 parts water. Moma would do chicken like this as well. I prefer to use the boneless chops and cutting them in 1/2, tenderloins work well as you just slice them 1 -1/2 inch thick for medallions
