1 1/2 cups sugar
1 cup light Karo syrup
1/4 tsp salt
1/2 lb raw peanuts
1 rounded tsp baking soda
1 Tbsp butter

Directions:
Directions:
Mix sugar, salt, and syrup in heavy pan. Cook to 160º , add peanuts. Continue cooking to 285º. (adjust for your altitude) Remove from heat and add baking soda and butter. Stir hard to barely mix and quickly pour in greased 9x9 pan. The secret to having airy brittle is to keep the bubbles in it, so don't spread it in the pan too much . . . let it flow.
