1 lb chicken tenders
Salt and Pepper
3/4lb of chorizo sausage, in packaged meats case near kielbasa
2 tablespoon of olive oil
3 cloves of garlic, diced
1 red bell pepper, diced
1 medium onion, diced
6 small red potatoes, diced
1 (15oz) can fire roasted chopped tomatoes
1(15oz) cand dark kidney beans, drained
2 teaspoons hot sauce
1 quart chicken stock
1 bag of blue corn tortillas chips
Garnishes: shredded cheddar cheese, chopped scallions, chopped cilantro, limes, sour cream

Preheat meduim soup pot over medium heat-high heat.

Chop tenders into bite size pieces. Wash up, then season chicken with salt and pepper. Dice chorizo. Add olive oil and chicken to the pot. Cook for 2 minutes, then add chorizo and garlic. Cook another 2 to 3 minutes, then add red bell pepper, onions, and potatoes. Cook 5 minutes, then stir in tomatoes, kidney beans, and hot sauce. Add chicken stock, and bring to a boil. Simmer for 10 to 12 minutes till potatoes are cooked.

Serve soup with the garnishes.
