Cobbler:
1 c. sugar
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/3 c. shortening
1 - 2 (14.5-oz.) cans tart cherries, drained, SAVE JUICE
Cherry sauce:
1 1/2 c. sugar
pinch of salt
2 T. cornstarch
1 c. water
3/4 c. cherry juice
1/4 tsp. almond extract
1/4 tsp. red food coloring

Directions:
Directions:
Cobbler: Combine all batter ingredients except shortening; add cherries last. Melt shortening in oven in 9x9-inch pan. Pour batter and cherries into melted shortening in pan. Bake at 350º for 45 minutes.
Sauce: Mix sugar, salt and cornstarch. Blend in cherry juice and water. Boil until thick and clear. Add almond flavoring and food coloring. Serve poured over cobbler or separate for individual taste.

Since Richard and I are diabetic, I use Splenda for at least part of the sugar.
