1 Butternut Squash (~ 2.5 lb.); peeled, seeded and cubed
3 C. Water
3/4 tsp. Salt, divided
2 Tbsp. Butter
1 Tbsp. Brown Sugar, packed
1/8 tsp. ground Nutmeg
ground Black Pepper, to taste
1 Tbsp. Butter, for garnish if desired

Directions:
Directions:
In a saucepan, over medium heat; bring squash, water and 1/2 tsp. salt to a boil. Reduce heat; cover and simmer for 20 minutes or until the squash is fork tender. Drain.
Place squash in a mixing bowl. Add butter, brown sugar, nutmeg, pepper and 1/4 tsp. salt; beat until smooth. Place in a serving bowl and garnish with Butter.
