6 Potatoes, peeled and thinly sliced
1/4 C. Butter
1/4 C. Flour
1-1/2 C. Milk
1-1/2 C. Chicken Broth
1 tsp. Salt
1/4 tsp. ground Black Pepper
1 Onion, diced; optional
1/4 C. Dijon Mustard
1-1/2 C. fully cooked ham, cubed
2 Tbsp. chopped Fresh Parsley, optional

Directions:
Directions:
Preheat oven to 350º.
Cover sliced potatoes with cold water until ready to use, then drain and pat dry with paper towel.
In a medium saucepan, melt butter and blend in flour, cook for 2 minutes over low heat. Add milk and broth and cook, stirring constantly; until thickened. Add salt, pepper, onion and mustard, mix well.
In a 2 qt. greased baking dish, layer potatoes, ham and sauce, ending with sauce.
Garnish with chopped parsley, if desired.
Bake for 1-1/2 hours or until potatoes are fork tender.

You can use all milk or all chicken broth if desired, instead of using both. You can also add shredded cheese, if desired.
