1/3 C honey
1/4 C lime juice
1 Tbs chili powder
1/2 tsp garlic powder
1 pound chicken, cooked and shredded
8-10 flour tortillas
1 pound Monterey jack cheese, shredded
2 C green enchilada sauce
1/2 heavy cream

Directions:
Directions:
Preheat oven to 350º. Mix honey, lime juice, chili powder and garlic powder together and toss with shredded chicken. Let marinate for at least 1/2 hour. Spray a 9x13 pan with cooking spray. Pour enough enchilada sauce on the bottom of baking dish to create a thin layer. Fill tortillas with chicken and generous amount of shredded cheese, saving about 1 cup of cheese to sprinkle on top. Mix remaining enchilada sauce with the cream and leftover chicken marinade. Pour sauce on top and top with cheese. Bake for 30 min until brown and crispy on top.
