5 lbs russet potatoes ( boiled, peeled and shredded )
1 stick butter
1 can cream of chicken soup
16 ounce sour cream
1 bunch green onions diced
16 oz shredded sharp cheddar cheese
salt and pepper

You can scale this recipe down, or make 2 and freeze one pan!
Melt butter in large mixing bowl. add rest of ingredients and gently mix by hand. Pour into oversized casserole pan ( I used a lasange pan ) or 2 smaller pans. Bake 350 for 30 min!! Cool slightly to serve as it will congeal.
