3 parts pork
1 part beef
1 1/2 lb. black pepper
2 boxes mustard seed
1 c. salt to 25 lbs. of meat

Directions:
Directions:
Grind meat and in a washtub, combine with the rest of the ingredients. Use your hands to mix well. Put in 1 1/2 inch casings ( intestines which were cleaned by hand). Hang the sausages to cure.

Paula sewed cloth bags to supplement the natural casings. I was told that Gene's job was to mix the meat by hand.
