Cupcakes
1 box white cake mix (no pudding in the mix)
1 (10 oz) can frozen margarita mix, thawed
3 egg whites
2 tbsp vegetable oil
1 tbsp grated lime zest
Icing
8 tbsp unsalted butter, softened
1 (8 oz) package cream cheese, softened
2 tbsp key lime juice
4-5 c confectioners sugar

Directions:
In large bowl, combine cake mix, Margarita mix, egg whites and vegetable oil using electric mixer.
Stir in lime zest, mix completely. Fill lined cupcake pan 2/3 full. Bake according to box instructions. Cool
Icing:
In large bowl combine butter, cream cheese, juice and zest with electric mixer. Add 4 c confectioners sugar one cup at a time, continue beating until light and fluffy. If icing is too thin add additional sugar.
I added green food coloring to my icing to be festive :)
