6 c. spiral rotini
2 lb. Italian sausage
pepper & garlic to taste
2 tbsp. butter
2 tbsp. flour
1/2 tsp. each of salt, pepper & paprika
1/2 c. Half & Half
1.5 tbsp. garlic powder
1.5 tbsp. chopped parsley
2 lb shredded Colby Jack cheese
6 tbsp. butter

Cook and rinse pasta, set aside. Cook the Italian sausage with the pepper and garlic to taste. Drain well; set aside.
White Sauce:
Melt the 2 tbsp. butter, add the 2 tbsp. flour, 1/2 tsp. of pepper, salt, pepper and paprika. This should be thick. Add 1/2 c. of half & half (can add up to 2 c. of half & half, but the more you add, the thinner the sauce will be). Add 1.5 tsp. garlic powder, 1.5 tbsp. of chopped parsley. Add the cheese, holding 1.5 c. out. Add 6 tbsp. of butter. Mix well. Use 2 9x13 baking dishes, sprayed. Add pasta to bottom of dish. Add meat on top of pasta. Pour sauce over top. Dot with butter (1/2 stick). Bake 40 minutes at 350º. Add remaining cheese, place back in oven until melted. Serve while hot.
