1 Tbsp. soft margarine or vegetable oil
1 clove of garlic, minced
2 onions, sliced
1 can (14 oz) tomatoes
1 can (19 0z) red kidney beans, drained and rinsed
1 can (19 oz) Romano beans, drained and rinsed
1/2 tsp of dried oregano
1 package (10 oz) fresh spinach or 1 bunch, stems removed
fresh ground pepper

In a large, heavy saucepan, cook the onions and garlic until soft in the heated oil or melted margarine. Add the tomatoes, breaking them up with the back of a spoon. Add the beans and oregano. Bring to a simmer. Add spinach then cover and simmer until the spinach is wilted - about 2 minutes. Season with pepper.

This is a favourite bean and spinach casserole that everyone (that would be 4 in total) has asked for when they are on their own. It is from the Anne Lindsay "Lighthearted Cookbook". Veggie, but can add some ground beef if you feel carnivorous - and even add chill powder. Anne Lindsay recommends serving this with something like 5 grain soda bread.You can be flexible with the bean varieties too.
