6 eggs, beaten
1 - 16 oz cottage cheese
18 finely crushed Ritz crackers
3/4 cup shredded cheese
8 oz of chopped green chile
Pepper to taste

Directions:
Directions:
Mix ingredients together. Pour into greased 9 x 13 pan and cover with 1/2 cup cheese. Bake 350º for 30 minutes.

If made the day before add more baking time.
Sometimes I use egg beaters and low fat cottage cheese.
You can use any cheese you like.
