3 lbs. sweet potatoes
2 tbsp. fresh thyme chopped
1 1/2 tbsp. Extra Virgin Olive Oil
1/2 tsp. cinnamon
2 tbsp. fresh parsley, chopped
2 tbsp. Balsamic Vinegar
salt and pepper to taste

Preheat oven to 425.
Pierce potatoes in several places with fork.
Place potatoes on baking sheet and bake for one hour or fork tender.
Pull potatoes and when they are cool enough to handle peel.
Then place potatoes in large mixing bowl and add balsamic vinegar, thyme, oil, and cinnamon.
Mash until smooth.
Taste season with salt and pepper.
Top with parsley.
