6 cups blueberries
2.5 cups sugar
1/2 cup lemon juice
zest of 2 lemons
1 pkg. lemon gelatin
3 T. low sugar fruit pectin
1 T. butter

Directions:
Directions:
Prepare jars and lids
In a large saucepan over high heat add blueberries, 2 cups of the sugar, butter, lemon zest and lemon juice. Stir frequently. In a small bowl, combine the remaining sugar, the pectin and the gelatin. Slowly add this mixture to the blueberries, stirring well to avoid clumping. Bring to a rolling boil. Continue boiling for about 1 minute. Remove from heat and skim any foam off if necessary. Ladle into prepared jars leaving 1/4-inch headspace. Place the lids on and process in a boiling water bath for about 15 minutes.
