Ingredients: French Toast: 1 lb. loaf of Bread (White, Egg or Challah), crusts removed 4 oz. Cream Cheese 1 C. Fresh or Frozen Blueberries 12 Eggs 2 C. Milk 1/2 C. Maple Syrup or Honey ground Cinnamon
Syrup: 1 C. Sugar 2 Tbsp. Cornstarch 1 C. Water 1 C. Fresh or Frozen Blueberries 1 Tbsp. Butter

Directions:French Toast: Cut bread into 1 inch cubes, place half of the bread cubes in a greased 9" x 13" baking pan. Cut the cream cheese into 1/2-inch cubes; place evenly over the bread cubes in the pan. Top with blueberries. Sprinkle ground cinnamon over the top. Top with remaining bread cubes and sprinkle ground cinnamon over the top of this layer. In a large bowl, beat eggs. Add milk and maple syrup; mix well with an electric mixer. Pour over bread mixture in pan. Cover and chill 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Preheat oven to 350º. Cover pan with tin foil and bake for 30 minutes. Uncover; bake for an additional 25-30 minutes more or until golden brown and the center is set. Cut into squares and serve warm with the Blueberry Syrup.
Syrup: In a saucepan, combine the sugar and cornstarch; add water. Bring mixture to a boil over medium heat; boil for 3 minutes, stirring constantly. Stir in blueberries; reduce heat. Simmer for 8-10 minutes or until blueberries have burst. Stir in butter until melted. Serve over French Toast squares. |
