30 tomatoes, skinned and smashed
2 large green peppers chopped without seeds
2 medium onions diced
4 jalapeņo peppers,chopped with seeds
1/4 c. salt
2 c. vinegar
3 T. minced garlic
1 T. cilantro
1 T. cumin

Directions:
Directions:
In large pot, add all ingredients. Cook, stirring occasionally, 3-4 hours or until desired consistency. Ladle into hot sterilized pint jars. Seal and process in water bath 25 minutes.

This recipe has never tasted exactly the same from year to year due to the hotness of the peppers. Craig likes a kick so he sometimes throws in a habanero pepper.
