4 tsp. Cajun spice
2 c. flour
2 c. fish breading
2 c. pancake mix
2 c. corn meal
1 c. milk
3 eggs

Directions:
Directions:
Mix Cajun spice, flour, fish breading, pancake mix and corn meal in large flat bowl. Set aside.
Mix milk and 3 eggs together with whisk.
When frying the fish, dip each piece in milk mix first. Transfer to flour mixture to coat and drop into deep fryer.
Any left over coating and egg mixture can be mixed together to form a batter. (Might have to add more milk.) This can be fried for hush puppies.

I prepared this for the fish fry after all eight grandkids caught the fish. (I caught the most!) My girlfriend and I made the whole meal.
