1 Standing Rib Roast (4-5 bones thick) or
1 Boneless Rib Roast (6-8 lbs)
1/2 cup Jerry's Dry rub & Seasoning Mix
1/3 cup Molasses
1/3 cup Soy Sauce
1/3 cup Worcestershire Sauce
1tbsp Liquid Smoke

Preheat the Rotisserie to 350º.
Wash roast and pat dry with paper towels.
Using Butcher's string, tie the roast at 1/2 inch intervals to keep from splitting while cooking. (Your butcher at the grocery store may do this for you if you ask him).
Rub the dry rub and seasoning mix all over the roast.
Place the rotisserie skewer through the center of the roast and place it in the rotisserie slots. Turn the temperature down to 325º and cook for 30 minutes per lb for medium well, 20 minutes per lb for rare. Mix the soy sauce, Worcestershire sauce, molasses and liquid smoke in a bowl and brush over the meat at 15 minute intervals during the last hour of cooking. Use a thermometer to check for doneness.
120 -125 for rare, 130-135 for med. rare, 140-145 for med., 150-155 for med. well, 160 and above for well. Remove from oven and let stand for 20 minutes before carving. This allows the roast to relax and the juices to soak back into the meat.

If you don't have a rotisserie oven you can use a conventional oven by preheating the oven to 425 and placing the roast in a roasting pan and cook at 425 for 15 minutes and then turn the oven down to 325. Baste the roast with its own juices and fat every hour while cooking.
