12 egg whites
1 tsp. cream of tartar
1/2 tsp. salt
1/3 c. sugar
1 1/2 c. sifted flour
12 egg yolks
grated rind of one orange
1 tsp. grated lemon peel
1 c. confectioner's sugar

Directions:
Directions:
Beat egg whites until foamy. Add cream of tartar and salt, beat until whites begin to hold their shape. Gradually add sugar, beating until mixture is stiff and glossy. Carefuly fold sifted flour into egg white mixture.

In another bowl combine yolks and orange rind. Beat until thick and lemon colored. Gradually fold yolk mixture into egg white mixture. Pour into an ungreased 10-inch tube pan and bake at 325º for 75 minutes. Invert on rack until cool. Remove and dust with confectioner's sugar.

My mother-in-law used to cut with fine thread into three layers and fill with whipped cream and strawberries. Made at Easter time.
