8 Tbsp. Butter, softened
1/4 C. Powdered Sugar
1 tsp. grated Lemon Zest
1 C. Flour
Pinch of Salt
Filling:
2 Eggs
1 C. Sugar
2 Tbsp. Flour
3 Tbsp. freshly squeezed Lemon Juice
1 tsp. grated Lemon Zest
Garnish:
Sifted Powdered Sugar, enough to garnish the top of the bars.

Preheat oven to 350º.
Crust:
Beat the butter and powder sugar together until blended, then add the lemon zest, flour and salt; mix thoroughly. Pres the mixture evenly in the bottom of an 8" square baking pan. Bake for 20 minutes. Remove from the oven and cool on a rack.
Filling:
Beat together the eggs, sugar, flour, lemon juice and lemon zest until thoroughly blended. Pour mixture over the crust. Bake for 20-25 minutes, until the top is dry and barely browned around the edges--be careful not to overcook; the custard filling should remain soft.
Remove from the oven and cool on a wire rack. Cut into 2-inch squares.
Garnish:
Sprinkle sifted powder sugar over the top when cool.

This is a recipe our mom made. These are best the day they are made. Double recipe if you are making them for a crowd and use a 9" x 13" pan.
