2 Tbsp. butter
1 medium onion, chopped
1 green pepper, chopped
2 sticks celery, chopped
1 clove garlic, minced
1Tbsp. flour
1 can chicken broth
1 14oz. can diced tomatoes
¼ c. parsley
1 bay leaf
½ tsp. salt
¼ tsp. thyme
1 lb. shrimp, shelled
10 oz. whole okra, fresh or frozen (not breaded)
1 tsp. lemon juice
1 tsp. Worcestershire sauce
Dash cayenne pepper

Melt margarine in large, deep skillet. Saute vegetables for about 5 minutes until soft. Whisk flour into 1 c. chicken broth and add to skillet, stirring constantly until thickened. Add tomatoes, seasonings, and okra and bring to a boil. Add more chicken broth if mixture seems too thick. Cover and simmer on medium low for about 10 minutes until okra is just tender (not falling apart). Add shrimp and cook 3 minutes until pink. Add rest of ingredients and serve over rice.
