3 1/2 lb peaches: peel, pit and finely chopped
1/4 c. lemon juice
6 c. sugar
1/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. cloves
1 box pectin

Directions:
Bring boiling-water canner, half full with water, to simmer. Prepare the lids and clean jars as directed on the pectin box. Put prepared peaches into a large kettle. Stir well. Measure the exact amount to sugar into a separate bowl. Set aside.
Turn the heat on high stirring the peaches constantly. Can add 1/2 tsp. butter to mixture to reduce foaming. Bring mixture to a full rolling boil. Stir in sugar and spices quickly. Return to a full rolling boil and boil exactly 4 minutes, stirring constantly. Remove from heat. Skim off any foam with a metal spoon. Ladle quickly into prepared jars, filling to 1/8 inch of tops. Wipe jar rims and threads. Cover with lids and bands screwing on until hand tight. Place into the canner . Water must cover by 1-2 inches. Cover, bring water to a gentle boil. Process jams 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. If lid springs back, lid did not seal and needs to be refrigerated. Let stand at room temperature 24 hours.
