Ingredients: 1 to 2 lbs. extra lean ground beef 4 tsp. oil 2 large onions, chopped 3-4 Tbsp. Worcestershire Sauce 2 Tbsp. or more Chili Powder (+ Cayenne if you like)
1 can condensed tomato soup (do not add water) 1 large can tomatoes 1 can kidney beans 1 can chick peas 1 can black beans 1 can baked beans in tomato sauce You can also add frozen peas, corn, mixed vegetables or a can of mushrooms

Directions:For a vegetarian chill, proceed as directed but don't add the meat. You may need a little more oil for the onions. Heat oil on medium in a large saucepan. Add the beef and onions, Worcesteshire sauce and chili powder and cayenne if desired. Simmer together until the onions are soft. Add all of the other ingredients (you may omit 1 can of beans if you are making the meat version). As you add the tomatoes, break them up with the back of a spoon. Heat to boiling briefly, then reduce temperature to simmer. Put the lid on the pot and leave everything cook together for about an hour. Make sure it does not boil again or it will burn on the bottom of the pot. Taste to see if you need to add more chili powder or salt. This makes about 8 to 10 servings and freezes well. |

Notes: This is the best chill I've ever had. I was reluctantly given the recipe (the meat version) after asking for it many times. It was an old family recipe, passed down a couple of generations. Now you have it too.
