4 Russet potatoes, sliced into 1/4 inch slices or cubes
1 onion, sliced into rings, optional
Salt and Pepper to taste
3 Tbsp. Butter
3 Tbsp. Flour
1/2 tsp. Salt
1/2 tsp. Cayenne Pepper
1 tsp. Garlic Powder
2 C. Milk
1-1/2 C. shredded Cheddar Cheese

Directions:
Directions:
Preheat oven to 400º. Butter a 1 quart casserole dish.
Layer 1/2 of the potatoes into casserole. Top with onion slices and the remaining potatoes. Season with salt and pepper to taste.
In a saucepan, melt butter. Mix in the flour, salt, cayenne pepper and garlic powder, stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese and continue stirring until melted. Pour cheese over the potatoes and cover with tin foil. Bake for 1 hour covered, remove foil and bake for an additional 30 minutes.
