1 3/4 c. graham cracker crumbs
1/4 c. softened butter (or margarine)
1/4 c. crushed walnuts

Filling:
8 large eggs
2 c. sugar
3 oz. pkg cream cheese
16 oz. cottage (or ricotta) cheese
1/2 lb. melted and cooled butter (or margarine)
1/2 c. cornstarch
3 tbsp. lemon flavoring OR
1 fresh orange and 1/2 lemon in food processor OR
1/2 c. Amaretto Liquer

For the crust, lightly spray 9" springform pan with cooking spray. Mix crumbs and melted butter. Press into bottom and 1 1/2 inches up side of pan. Bake for 8-10 minutes or until edges are lightly golden and crust is set. Cool on rack.

Beat eggs amd sugar until fluffy. Add cottage cheese and beat until smooth. Add cream cheese, cornstarch, flavoring and melted butter until well mixed. Bake at 325º for 1 hour and 15 minutes. Shut off oven, leaving door shut, for two more hours. Remove from over and cool.

I serve plain or on festive occasions add one can of cherry pie filling on top flavored with Amaretto. Enjoy!!!
