Peach Pie with Shortbread Crust Recipe

6-8 fresh peaches, sliced
Crust:
1 cube butter
1 cup flour
2-3 Tbsp. sugar
Glaze:
1 cup sugar
3 Tbsp. peach Jello
1 cup water
2 Tbsp. cornstarch

Directions:
Directions:
Blend crust ingredients with a fork until crumbly. Push into pie plate and bake at 375º for 12 - 15 minutes (best if a little browned). Cool.
Mix glaze ingredients in a saucepan. Bring to a boil stirring constantly. Boil one full minute. Remove from heat and pour into another dish...refrigerate until cool and not too thick/not too thin (spooning consistency),stirring once in a while.
Slice peaches into pie crust, spoon glaze over peaches filling spaces in between. Chill in refrigerator. Best if eaten within 24 hours.

This is a family favorite, especially of Chad's. He grows the peaches and gets his reward in pies from late August to early October every year!
