"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

1 1/8 c. Crisco shortening
3 tbsp. cold water

3/4 c. sugar
3 tbsp. flour
2 tsp. cinnamon

Directions:
Directions:
For the crust, sift flour and salt togther, cut in shortening until mixture resembles coarse crumbs. Beat egg slightly, add water and vinegar and mix well. Add flour mixture and mix well. Form into three balls. Roll out on floured surface to make three crusts or two crusts and lots of cutouts. Place bottom crust into pie pan.

Place apples into the crust and top with mixture of sugar, flour and cinnamon. Cover apples with top crust; trim to 1/2 inch hanging over the edge. Seal edge tucking top crust under edge of bottom crust and flute to give scalloped effect. Sprinkle top generously with sugar and cut small slits in top crust to allow steam to escape. Place cookie sheet under pie to catch juices. Bake at 400º for 10 minutes, then reduce temperature to 350º for additional 45-60 minutes.

Leftover pie crust can be cut in shapes and sprinkled with sugar. Bake on cookie sheet at 400º for 10-12 minutes. We call these TEASERS because you can let the family eat them before they are allowed to eat the pie!!
