3 whole large Red Bliss potatoes with skins on and quartered
1 teaspoon sugar
1 teaspoon white vinegar
3/4 cup low-fat mayonnaise or Miracle Whip
1/2 cup sliced celery
1/3 cup finely chopped onion
1/4 cup chopped sweet pickle, or relish
1 teaspoon salt
1 teaspoon celery seed

Directions:
Directions:
Place potatoes in saucepan and cover with water. Bring water to a boil and then simmer about 15 to 20 minutes, until potatoes can be pierced easily with a fork but are still firm and not mushy. Drain and place in a large bowl. Sprinkle potatoes with sugar and vinegar then mix in mayonnaise, celery, onion, sweet pickle, salt and celery seed. Mash gently a few times with a potato masher but be careful, you will still want chunks of potato. A little mashing gives the salad a creamier texture. Sprinkle with a little paprika and cover and chill until serving. Serves 4.
