Crust:
3/4 C. Graham Cracker, crumbs
1 Tbsp. Butter, melted
Filling:
8 oz. Cream Cheese, softened
1 Egg
1-1/2 tsp. Vanilla extract
1/4 C. Sugar
Topping:
1 can Pie filling of your choice (cherry, strawberry, blueberry)

Crust:
Mix graham cracker crumbs with butter. Place baking cup liners in cupcake pan. Place 1 Tbsp. of crumb mixture in the bottom of each baking cup (use the bottom of a shot glass to press it in place).
Filling:
Beat cream cheese, egg, vanilla extract and sugar until smooth. Spoon cream cheese mixture evenly on top of crusts in pan. Bake at 350º for 10-12 minutes. Cool.
Top each cakelette with a spoon of pie filling. Garnish with whipping cream, if desired.
