2 eggs room temperature
1 cup sugar
1 cup shortening
1 - 1 oz. bottle lemon extract
1/2 tsp. salt
1 cup milk room temperature
4 cups flour
6 tsp. baking powder
3 - 4 drops yellow food coloring

Frosting
1 lb. confectionery sugar
rest of lemon extract
milk

Directions:
Directions:
Pre-heat oven to 350º
Mix eggs, sugar, shortening, 3/4 of lemon extract (set aside the rest for frosting), food coloring, and salt until creamy. Add milk and stir. Add flour and baking powder and mix. Let dough sit for a least five minutes. Turn dough onto a board and knead for two minutes (until dough is not sticky). You can add a little more flour a little at a time to help in kneading the dough. Roll into balls and place on cookie sheet. Bake 12 - 15 minutes. Cool completely. Frost.

Frosting
Combine sugar and lemon extract and add just enough milk to make a thick paste. Put on sprinkles before frosting dries.
