3 c coarsely grated zucchini
½ c. finely chopped onion
2 T fine chopped parsley (opt.)
½ tsp. season salt
1 clove garlic, finely chopped
4 slightly beaten eggs
1 c Bisquick mix
½ c. grated parmesan cheese
½ t reg. salt
½ t oregano
½ c vegetable oil

Directions:

Grease a 13x9 pan
Mix all ingredients and spread in pan.
Bake until golden brown, about 25 minutes
Cut into 1 ½ x 1 ½ squares for appetizers and larger pieces for lunch.
