3 eggs - beaten
1 C salad oil
2 C sugar
2 t vinegar
2 C zucchini - shredded coarsely
1- 8 ¼ oz. can of crushed pineapple - drained
3 C flour
1 C walnuts
1/2 tsp. baking soda
1/2 tsp. baking powder

Directions:

Electric Beater: Beat eggs until fluffy
Add salad oil, sugar, and vinegar. Continue beating until thick and foamy
With spoon stir in zucchini and pineapple
Combine unsifted flour, soda, salt, baking powder, and nuts.
Stir dry ingredients gently into zucchini. Mix just until blended.
Divide into 2 qt. loaf pans (5x9) - floured
Bake 350°- 1 hour. Cool in pans 10 minutes
Turn out on wire rack.
