1/4 C. Butter, sliced
3 Eggs
3/4 C. Milk
1 tsp. Almond Extract
3/4 C. Flour
1/4 C. Slivered Almonds
2 Tbsp. Brown Sugar
1 tsp. ground Cinnamon
2 C. Sliced Canned Peaches, drained

Preheat oven to 375º
Place sliced butter in cold 12 inch cast-iron frying pan (or an 8 inch X 8 inch square baking pan). Place in oven to heat pan and melt butter. Remove when butter is melted, do not let it get brown.
In a bowl, combine eggs, milk and extract. Gradually add in flour, mixing to combine well. Add in sliced almonds and stir.
Sprinkle brown sugar evenly around pan on top of melted butter. Pour batter over the top of butter. Arrange peach slices on top of batter and sprinkle with cinnamon.
Bake for 30 minutes.

You can add more, or less brown sugar and cinnamon as you desire. You can also substitute fresh or frozen peaches for the canned. I prefer to use peaches I have canned with a cinnamon stick. Chopped Pecans, instead of Almonds is also good.

**You can also use Pears instead of Peaches.
