1 medium head cauliflower, broken up and cooked
4 carrots, diced in rounds and cooked
1 can cream of chicken soup
2 c. grated Cheddar cheese
1/2 c. buttered bread crumbs

Directions:
Directions:
Combine cooked carrots and cauliflower; arrange half in casserole dish sprayed with cooking spray. Add 1/2 soup and 1/2 cheese. Repeat layers. Top with bread crumbs. Bake at 350º for 30 minutes.

Instead of bread crumbs I like to top the casserole with French Fried Onions.
