"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Combine the flours, salt soda and sugar in a bowl. Scoop up handfuls and allow to drop back into the bowl to aerate the mixture. Add enough buttermilk to make a soft dough. Knead for 2 minutes. Form into a round loaf about as thick as a large fist. Place on a lightly floured baking sheet and cut a cross in the top. Put at once into a preheated oven of 425º for 30-40 minutes. When baked the loaf will sound hollow when rapped on the bottom with your knuckles. Wrap immediately in a clean towel to stop crust form hardening too much.
